Coeliac disease is not an allergy or intolerance, but is known as an autoimmune condition, where the immune system mistakenly attacks healthy tissue of the small intestine. In this case the body attacks the gluten (a protein found in wheat, barley & rye) causing inflammation and damage to the surface of the intestines known as the villi, which affects the body's ability to absorb nutrients from food.
